Creamy Chocolate Banana Muffins Recipe

To me there is nothing better than taking time out of my hectic life to bake, either for myself or for a loved one. Though lets be honest, if I do bake for a loved one chances are a couple of cupcakes will go missing. After all the most important part of baking is the taste test!
My twist on Banana muffin is a scrumptious dessert compared the traditional Banana Muffin by simply adding Chocolate. I mean come on what could be better than bananas and chocolate in a cupcake!

Recipe 
Ingredients for 12 cupcakes
1 1/2 cups of self raising flour 
3 large bananas 
3/4 of a cup of white sugar (granulated or caster both work) 
1 beaten egg 
1/3 of a cup of melted butter
chocolate spread of your desired preference.  

Instructions
1. Turn the oven on to 175 Degrees Celsius (350 Degrees Fahrenheit) 
2. Mash the banana in a large bowl. Then add the sugar, beaten egg and melted butter. Don't worry at this point your mixture will look like baby food but just bare with me! 
3. Sift in the flour into the mixture. 
4. Fold the flour into the mixture using a metal spoon. Using a metal spoon prevents you from beating out the air you added to the mixture when you sifted the flour. Now you mixture should be a thicker consistence but still not the most attractive of cupcake mixtures!
5. Line a cupcake tray with paper cupcake liners. Add a teaspoon of the cake mixture into each case. After add another teaspoon. Use the remaining mixture to add to the cases that seem to have less mixture than the rest. 
6. Put the cupcake tray in the oven and bake for 20-25 minutes.  
7. Once they are bake they should be golden and spring back when tapped. If you are unsure stick a cocktail stick into one to double check. The cocktail stick will come out clean when the cupcakes are cooled. 
8. Leave the cupcakes to completely cool. Trust me, I know you want to eat them now but the wait will be worth it! 
9. Cut a hole in the top of your cupcake to form a circle which can be removed like a lid. Try not to cut to low down into the cupcake otherwise it falls apart. Through if it does no need to worry just think of the remains as a delicious bakers snack whilst you continue on to the next cupcakes! 
10. Place half a teaspoon of chocolate spread into the crater in the cupcake and put the circle "lid" bake on! Hey presto your first cupcake is complete! Continue with all the remaining cupcakes. 
11. Now grab yourself a cuppa and enjoy your cupcake. Personally I like to enjoy mine whilst watching a You Tube video! 

I would love to know how you get on with the recipe. Cutting the circle out the cupcake can be tricky but as they always say practice makes perfect!
